CSA Week 2

Week 2 of my CSA and I am loving all of these delicious veggies in my house. This week was another good one with lettuce, spinach, strawberries, broccoli, and asparagus. Plus I still have a bunch of greens left over from last week. So I need to start eating some more salads.

Here is my half of the haul this week:

In other news, I'm drowning in strawberries. So I might have to get creative to use all of them up!

PS: You may remember that last week I got radishes. Turns out your should not put them in the fridge. So, lesson learned there.

CSA Week 1

I am BEYOND excited that it is CSA time again. I know that in about 5 weeks I will be totally sick of greens but when I opened that box today and saw all of those beautiful veggies I almost wept with joy. Ok, so that might be a little dramatic, but I was pretty darn excited.

There was a surprise in the box this time - radishes. WHAT DO YOU DO WITH RADISHES? I have no idea blog readers, no idea. It is time to work the google on the internet machine to figure something out. I will of course report back with what I came up with. I am not sure I've ever eaten a radish before....

Anyway, here is what was in the box:

2 heads of lettuce
1 bag of arugula
1 bag of misc. greens (no clue what it is...but it tastes ok)
1 bunch broccoli
1 bunch radishes
1 pint strawberries

Of course I split this with a friend so my haul was half of all of that. Here is my half:

Doesn't that look delicious? I am hoping to get more strawberries next week! Oh, and no arugula is visible in this picture because I don't like it and made my friend take all of it! :)

CSA, week 6

We could easily call this week "The Week of Squash!" because we got 9 summer squashes this week to share. Happily, Candice took away half of them because I still have my squash left over from last week. Not to mention that my squash plants are BLOOMING like CRAZY. I may end up with too much squash this summer.... :)
So this week I ended up with:
1 onion
a bunch of lettuce
an unidentifiable green veggie (collards?)
1 bunch broccoli
1 bunch cauliflower
2 zucchini
2 yellow squash

I am thinking this week might have to involve some salads. I've had a bit of a break from them so I think I can handle eating them again. I still have quite a bit of veggies in the fridge from past weeks so I think the only way to get through a good chunk of them is to eat some salads. Also, I am planning on making some serious zucchini bread! I can always freeze it and who doesn't like some zucchini bread!!

Tour my fridge

Today I am going to take you on a tour of my fridge! You will see how badly I am drowning in produce here! I need some help...or some recipes!

As you can see my fridge is pretty bare overall. On the door I have some cranberry juice (blech - but necessary to help with my 'issues'), tomato sauce, peanut butter, and condiments.Shelf number 1:Broccoli, cauliflower, and cabbage. In the tupperware containers I have leftovers from a potluck I brought a pepper, carrot, and cucumber salad to. I also have some extra peppers sliced up too.
Shelf 2:1/2 cucumber
1/2 zucchini
1 yellow squash1 bunch of parsley

Drawer 1:Lettuce
Spinach

Drawer 2:Carrots and Arugula

Um ya - so I have seriously nothing but veggies. I have plenty of dry goods in my pantry - maybe I will take you on a tour of that one day soon too - but ya, in the fridge, veggies, veggies, and more veggies!

CSA, week 5

It is another great week for the CSA! The bad thing is - I am still trying to catch up from last week! I have produce coming out my ears!!!

I forgot to take a picture of everything together this week but here is my portion:

1 bunch of broccoli1 bunch of cauliflower
1/2 of a GINORMOUS zucchini1 yellow squash
1/2 head of lettuce
1/2 head of cabbage
1/2 fennel
I have to say - some of the items were a mystery to me this time.

This, for instance.

What is it?!?! Apparently it is fennel which I do not think I like. It smells like licorice which I definitely am not a fan of so I am guessing that I am not going to be a huge fan of this...might need to find someone else to take this one...

And what is with the cone?!?! I mean, obviously it is a lettuce or cabbage of some kind but I have never seen one shaped like a cone before! So cool!
And for fun, here is a perspective picture of the zucchini. Seriously - HUGE!

I am very annoyed with the sideways images! You get the idea though.

CSA, week 4

Our CSA delivery this week was AWESOME! We got 1 zucchini, 1 yellow squash, 1 cauliflower, 2 broccoli, a bag of arugula, and a bunch of carrots. YUM! I got half of all of that which makes for an awesome week :)

I can't even explain how happy I am that this week didn't include spinach. I am a little tired of spinach! I think I might shred all the squash and make zucchini bread this weekend. Not sure what I am going to do with the rest of it!

It was fun to get the carrots with the greens still attached!

What do you do with Kale?

So this week I got a bunch of kale included in my CSA. Kale is a food that I have very little experience with. To put it simply, I have no idea what to do with it. My go-to meal with leafy greens is to throw it in a salad but kale doesn't really seem like a salad veggie.

So - I googled and found this recipe for Potato Cakes with Onions and Kale.

I have to say - this was a pretty tasty way to eat some kale. I am not a huge fan of the wilted greens but the combination with the potatoes made them tolerable. I didn't use as much onion as the recipe called for, primarily because I was crying too hard to cut any more. Onions make me very sad. I also added salt because I think potatoes always need more salt!

Anyway, here they are right after they came out of the oven.

CSA, week 3

Well it is another week of leafy greens. It will be tough for me to get through them all given how much I am out of town these days! Spinach and lettuce are back again as are strawberries. Joining the party is kale (seriously, what do you do with kale??!!?!?!) and asparagus (YUM!).

We got another BEAUTIFUL head of lettuce. I took a picture with my hand in it to show how huge it is - seriously, that is a lot of lettuce! It was almost too pretty to cut in half!

CSA, week 2

We got our second CSA delivery this week and it is looking like a lot more salads are on my horizon. I just finished the spinach from last week and we got another huge bag of it plus another head of lettuce. We have lots of strawberries this week too! YUM! Finally - for something different we also had some broccoli. We were supposed to have asparagus but it looks like we got broccoli instead - oh well I love both.

Here is my half of the goodies for the week:

Here is our BEAUTIFUL head of lettuce before we chopped it in two.

Sooo - I need some spinach recipes ASAP!!!

CSA, week 1

A friend and I joined a CSA for the growing season. This week marks the first week of our goodies! We are sharing a small share and thank goodness for that because we are both drowning in produce! This week we split 3 pints of strawberries, 1 pound of spinach, 1 head of lettuce, and 1 bunch of swiss chard.
Can we say salads for lunch this week?!?!

The picture includes only MY portion - so this is only half of what we got this week. Holy moly!

I have no idea what to do with swiss chard but man is it pretty!

Here is my plan for using up these goodies:

1.5 pints Strawberries - hello strawberry shortcake
Spinach and lettuce - salads with carrots, cucumbers and chicken paired with a homemade roll
Swiss Chard - research what to do with this other than to eat it in salad.

We get another delivery next week so I've got to eat all of this before the new goodies come in!
